Apple Breakfast Cake

My mom gave us a few bags of apples this fall. We have been making lots of goodies using apples lately. One of them was Apple Breakfast Cake. This is a great recipe to bake to you have some extra fall apples.

Ingredients:

1/3 cup of butter or margarine

1 cup sugar

1 egg

1 tsp. vanilla

2 cups flour

3 tsp. baking powder

1 cup milk

3 apples, cored and sliced

1 tsp. cinnamon and 1/4 cup sugar combined

Directions:

  • Preheat oven to 350 degrees. Lightly grease a 9×13 glass baking dish.
  • Using a big bowl, cream butter or margarine and 1 cup sugar together. Add the egg and vanilla, mix well.
  • Mix in flour, baking powder and milk.
  • Pour half the cake batter into the baking dish. Place half the apple slices on top of the batter. Sprinkle with half the cinnamon and sugar mixture.
  • Pour the remaining batter over the apple layer. Place remaining apples on top and sprinkle with the rest of the cinnamon and sugar mixture. (pic above)
  • Bake for 40-50 minutes. Baking time can vary. I start checking on my Apple Breakfast Cake after about 40 minutes of baking time.
